I'm about to purchase one of these tracker units for the coupe - noticed that there is an MVT 380 model available as well.

In laymans terms - is there much difference?

Main reasons for fitting is vehicle tracking - remote shutdown would be a bonus if available.

Where are you getting it from?
Whatever you buy, make sure it has 3G support. I have heard that the GSM (2G) networks could be decommissioned in the near future, so from now on I would recommend making sure it is 3G compatible.

Remote shutdown is available on the 340 and the 380. The 380 just has some other inputs/outputs compared to the 340, but it sounds as though you would be just wasting money on the 380 as you won't use the extras.

I'm a bit unsure of the legal ramifications of shutting the engine down remotely - Say they are on the highway, you shut it down and they get

rear ended by a semi or roll it and die etc.

Great instant justice but not sure where you would stand in a lawsuit.

The T333 tracker is the one I would go for now, as it will be more future proof.

Nobody seems to be selling them on ebay yet.

The car is not just going to stop dead if you cut the ignition.
But anyway, if you are really concerned, when you send the command to turn off the ignition, you can do so with a minimum speed attached, so that the output will not change until the vehicle is below a certain speed.
