I'm tempted... it's either those wheels for mine, or some foose jobbies.

17x8 sounds too wide for a 66 though.. I thought only 7's would fit.
Are you planning to put them on a 64-66?

We sell our Styled Steel wheels, and our 10 spoke wheels in 17 x 8 for mustangs all the time. Bumblebee has the Styled Steels on his slammed 66 GT vert, and it looks mint. It's the tyre size that is important, and that is determined by the ride height, guard lips etc etc.

On the 66 backspace is very important as there is not much room for error and may need different BS front and back to clear components depending on brake/hub/suspension setup.
16"17" x 7" 4.25-4.5 bs is the safest route but with 8" you will need at least 4.75 bs however if you go 16"and smaller with big backspace on the front you risk interference on the upper ball joint.
My Foose rims are 17x8.5 4.5 bs and they were too wide front and back but i have RRS suspension on the front and the disc brake on rear which also pushes it out approx 5mm.
The rims in my avatar are 18x8.5 with 5" bs i think by a quick measurement and 225x40 tyres, i could go 235 comfortably, 4.75 should be right on std setups.
